Easy, healthy dishes to start off the semester!
With UHMC Wellness Hui

RECIPES:
????Tofu Patties
1 lb ground pork or ground turkey
1 16 oz container of tofu, firm or extra firm
1 egg
Salt and pepper to taste
Ginger powder (optional) to taste
Olive oil

Place your ground meat into a medium-sized bowl.
Cut tofu into four rectangular patties.
Using a spoon, dig out a compartment in each of the tofu rectangles making sure not to dig all the way through the bottom. Set the rectangles on the side and throw the dug out tofu into the bowl of meat.
Add egg, salt, pepper, and ginger powder to meat and tofu. Smash tofu into smaller bits so it can mix better with the meat, mix all ingredients until combined well.
Spoon in the meat mixture into the tofu rectangles until it is level with the tofu top.
Form the remainder of the mixture into patties about 2 inches in diameter.
Add a splash of olive oil to a pan and heat on medium. Place tofu rectangles (meat side down) into a frying pan and cook until brown. Flip and cook rectangles on tofu side until golden brown and the center is cooked through.
Fry the remaining patties in the same manner.

????Benedictine Crostini Recipe - By Chef Rosa Mariotti
Quick Massa Sovada - one loaf
Portuguese Sweet Bread
Baking Ingredients
1 1/2 t dry yeast
1/3 C lukewarm milk
3 T sugar

1 1/ 2 C (200 g for accuracy) Bread flour or All Purpose Flour
zest of one lemon
1 Large Egg
2 T unsalted butter
1/2 t salt

Egg wash glaze for brushing before baking
1 egg yolk
a pinch of salt
1 T water

Benedictine Cucumber Filling: 12 portions
12 Buttered and toasted sliced Sweet Bread
1/2 c diced Keiki cucumber
2 T minced maui onion
4 oz cream cheese.
2 T minced herbs
a pinch of salt
For Garnish
12 thin slices cucumber
Chives, mint, basil leaves
Sea salt, tobiko and/or sieved salted/cured egg yolks

????Mushrooms Casino by Marc Antosch
12 Button Mushrooms
1 can Chopped Clams (can)
1/2 of a small Eggplant
1/2+ cup cooked Quinoa
1/2 cup wilted Spinach (optional)
1/2 bunch Curly Parsley
1 wedge of Lime (or Lemon)
1/4 of a large Bell Pepper (Red or Green)
1/2 cup of Goat Cheese
1/2 cup of Greek Yogurt
1/2 of a medium Shallot or 1/4 small Red Onion
1 large glove of Garlic
1-3 pinches Salt (to taste)
1 teaspoon of freshly ground Pepper
1-3 pinches Paprika (adds nice color)

Optional additions/Substitutions:
1-2 dashes of White Wine (optional)
1/3 cup of Panko (optional)
6-10 slices of Prosciutto/Coppa/Bacon (optional)
1/3 cup of Spinach Artichoke Dip (optional) to substitute Goat Cheese

????Air Fried Vegetarian Tostada (Makes 4)
Can use refried bean featured in https://www.youtube.com/watch?v=maVB-7jHIos&feature=youtu.be
Prepare Potato beyond meat burger mix - done in
about 15 to 20 mins!
1 packet taco seasoning   
2 large potatoes diced 
6 cloves of garlic minced  
2 beyond burger patties at room temp - readily available at Costco in 8 patty pack 
1/2 ground pepper 
1/2 tsp seasoned salt
Process 
Oil large frying pan on medium heat
add garlic and stir until lightly browned.
add minced potato stir to combine with garlic.  Drizzle with cooking oil if not coated evenly. Cover to steam stirring every few minutes
After about 5 minutes mix in 1/2 tsp seasoned salt and 1/2 tsp ground pepper. Cover and stir occasionally for an additional 10 minutes until diced potatoes are browned.
Remove cooked potatoes from pan and set aside, return pan to medium heat
Add 2 beyond burger patties to pan.  Use a spatula to break patties down into smaller pieces.  Continue to break apart chunks until they are evenly sized.
Add in taco mix packet and stir well to combine as "meat" continues to cook.
When the meat begins to try from the taco seasoning, about 3 to 5 minutes add in potato mixture and continue to stir and combine. Once evenly coated remove from heat.
Air Fry Corn Tortilla - no mess, super easy!
4 unfried white corn tortilla.  - can get these in bulk from Costco in the open refrigerated section.
Process
Set air fryer to 400 degrees
add tortillas in oven, fry for about 4 to 5 minutes
open oven to carefully flip and fry for an additional 3 mins.
remove when tortillas are lightly browned.  Pay attention once flipped as they cook very quickly and can be easily burned.
Making tostada - easiest part!
Air Fry Corn Tortillas 
Potato beyond meat burger mix
1 cup Refried Beans (can use beans featured in previous video)  
1/2 shredded cheese 
1/2 cup shredded cabbage
salsa
Process
in a fried tortilla, put a thin layer of refried beans, a few tablespoons coating tortilla evenly.  
at couple of tablespoons potato /"meat" mixture
top with thin layer of finely chopped cabbage, shredded cheese, sour cream (or plain Greek yogurt), and salsa. Add any other topping you may fancy!
